Momofuku Milk Bar Crack Pie

• 10 to 12 servings
• PREP: 40 minutes
• TOTAL: 15 hours

Ingredients

Oat Cookie Crust
• Nonstick vegetable oil spray
• 9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, room temperature, divided
• 5 1/2 tablespoons (packed) golden brown sugar, divided
• 2 tablespoons sugar
• 1 large egg
• 3/4 cup plus 2 tablespoons old-fashioned oats
• 1/2 cup all purpose flour
• 1/8 teaspoon baking powder
• 1/8 teaspoon baking soda
• 1/4 teaspoon (generous) salt

Filling
• 3/4 cup sugar
• 1/2 cup (packed) golden brown sugar
• 1 tablespoon nonfat dry milk powder
• 1/4 teaspoon salt
• 1/2 cup (1 stick) unsalted butter, melted, cooled slightly
• 6 1/2 tablespoons heavy whipping cream
• 4 large egg yolks
• 1 teaspoon vanilla extract
• Powdered sugar (for dusting)

Preparation: Oat Cookie Crust

• Preheat oven to 350°F. Line 13x9x2-inch metal baking pan with parchment paper; coat with nonstick spray. Combine 6 tablespoons butter, 4 tablespoons brown sugar, and 2 tablespoons sugar in medium bowl. Using electric mixer, beat mixture until light and fluffy, occasionally scraping down sides of bowl, about 2 minutes. Add egg; beat until pale and fluffy. Add oats, flour, baking powder, baking soda, and salt and beat until well blended, about 1 minute. Turn oat mixture out onto prepared baking pan; press out evenly to edges of pan. Bake until light golden on top, 17 to 18 minutes. Transfer baking pan to rack and cool cookie completely.

• Using hands, crumble oat cookie into large bowl; add 3 tablespoons butter and 1 1/2 tablespoons brown sugar. Rub in with fingertips until mixture is moist enough to stick together. Transfer cookie crust mixture to 9-inch-diameter glass pie dish. Using fingers, press mixture evenly onto bottom and up sides of pie dish. Place pie dish with crust on rimmed baking sheet.

NOTE: it is optional at this point to sprinkle 1/4 cup butterscotch chips over cookie crust.

Preparation: Filling

• Position rack in center of oven and preheat to 350°F. Whisk both sugars, milk powder, and salt in medium bowl to blend. Add melted butter and whisk until blended. Add cream, then egg yolks and vanilla and whisk until well blended. Pour filling into crust. Bake pie 30 minutes (filling may begin to bubble). Reduce oven temperature to 325°F. Continue to bake pie until filling is brown in spots and set around edges but center still moves slightly when pie dish is gently shaken, about 20 minutes longer. Cool pie 2 hours in pie dish on rack. Chill uncovered overnight. DO AHEAD Can be made 2 days ahead. Cover; keep chilled.

• Sift powdered sugar lightly over top of pie. Cut pie into wedges and serve cold.

353 Broadway, Saratoga Springs, NY.

Final clearance sales at this store had begun Sunday after a twitter and facebook notice and will continue the next two weeks.

"While the decision to close our store was difficult, after losing our lease and reviewing other rental opportunities, we believe it is best to close our brick and mortar store; continuing our website sales to operate successfully."

The company opened their Saratoga store in 2005.

The store is offering 40-50% off all their clothing, bags, shoes, jewelry, etc. All fixtures and display items are available.

I will go out on a limb here and list a couple 2009 (or longer) trends that I hope will go away as we enter 2010. Firstly, the Vera Bradley backpack. I know I will hear all kinds of grumbling on this but to me Vera Bradley will always be a diaper bag. When my kids were young the Vera Bradley diaper bag was very in. The prints hid stains and you could throw it in the wash if "something" was to soil it (and by something, I mean poo). One high school girl told me that her school needed a "fugly bag exorcist" to rid the school of Vera Bradley. Students at parochial schools are required to wear a uniform yet do their best to individualize it. Students at public schools have the opportunity to be individuals, yet often fall into wearing their own version of a uniform just to fit in. Vera Bradley backpack, black fleece North Face jacket, side pony tail, and Ugg boots. One word. Boring.

Secondly, Pandora jewelry. My belief is that men come up with jewelry that you can add to. Like the Italian Charm bracelets. What could be better than not having to put any thought into a gift. Just buy another bead to add to the thread. Birthday, anniversary, Christmas, etc. - just buy a bead. Ugh.

I am sure many disagree with me. That's fine. I just prefer fashion with some thought and imagination. Let's hope that cookie cutter looks are OUT!

For starters, here are a few pictures of last night's trunk show with Perfect PouchWear and the DTSB benefit for BEST (backstretch workers). It was fantastic to see so many people out in support of the event. A big thank you to Susan Brown for all her hard work. I wish I had taken more pictures, but I was busy and didn't think of it!

And now, unfortunately, I have a gripe. I read a blog that stated that "While offering some great clothes, a lot of the boutiques downtown can be pricey for an everyday shopper." Those are fighting words! The dresses shown above run from $69 - $89 dollars. Exactly what the MSRP is.

Last night we were playing Win Place & Show on the dice - saving the buyer anywhere from 10% - 30% off their purchase. We do our research when bringing lines into the store. They have to be unique (we are a boutique... if you want cookie cutter, mass produced items, then go to a box store). The item has to be affordable, and long lasting. Plus, we also look to be a business partner and support locally owned businesses.

That stereo-typical "expensive Saratoga store" thing does not apply to us, and does not apply to so many other stores up and down Broadway. Play me off keyboard cat.

Today I spent the day with my husband at Lake George. We had a relaxing lunch on the patio by the dock. And even though the day was not as warm as we would have liked, it was a great day to be at the lake. After enjoying the water we walked Lake George and reflected on what a gorgeous area it is.
